It’s great on it’s own, or as a side dish to salmon, chicken or tofu. This is my least favorite method BUT it definitely works in a pinch and I always keep frozen cauliflower rice in the freezer for those days when you just need something easy and good enough.ĭefinitely add this one to your weeknight line-up. This is my favorite way to get the job done. Again, I prefer when the cauliflower rice is not super fine for this recipe, so keep that in mine when buying. Saut onions until translucent, about 3 minutes, add garlic and ginger. In a large skillet, heat sesame oil or water on medium-high heat. Use pre-riced cauliflower in the produce section of most grocery stores. Directions: Chop cauliflower into bite-size pieces and process in a food processor until it resembles rice.You’ll need 2 cups of grated cauliflower for one batch of this recipe. Cook until the cauliflower is tender, about 6 to 8 minutes. Stir in the curry/soy/honey/chili mixture. Heat a large, high-sided skillet over medium heat and add the oil. The cauliflower will have a rice-like consistency. In a small bowl, whisk together the Thai red curry paste, soy sauce, honey and chili paste. Just make sure you don’t grind it too small. 1 Tablespoon Chopped Scallions Salt And Pepper, to taste Preparation To grate the cauliflower, place about 5-6 florets into the bowl of a food processor and pulse about 25 times. While this is very easy to do, it is a bit time consuming, unless you are using the big food processor (I use the 4 cup). Use fresh cauliflower and pulse it in your food processor until you have a course rice texture.Just season and cook the chicken first and then add it back in at the end. You can bulk this dish up by adding some sauteed chicken as well. It’s meals like this that make it super easy to get your veggies in (even my kids like this one). Add carrots and scallions and saut for 5 minutes. olive oil in a nonstick pan over medium-high heat. I LOVE that it comes together so quickly and that at the end of the day, we are essentially eating a HUGE bowl of veggies. Cut the cauliflower into small chunks and process in a food processor until rice consistency, or grate the head of cauliflower with a grater set aside. This (very easy to make) Cauliflower Fried Rice has become a fast favorite for me.
